Potato Wedges with Sloppy Joe Topping

 

Preparation Time: 10 Minutes.  Cooking Time: 30 Minutes.  Serves: Two.

 

Ingredients -

 

2 x medium potatoes (400g)

1 x tablespoon olive oil

1 x clove of garlic (crushed)

1 x small white onion (chopped finely)

1 x small green pepper (chopped finely)

350g minced beef

1 x tablespoon mild American mustard

1 x tablespoon cider vinegar

60ml tomato sauce

30g coarsely grated cheddar cheese

 

How to -

 

  1. Pre-heat oven to 220°c
  2. Cut each potato into 8 wedges; place in large shallow baking dish, drizzle with half of the oil.
  3. Roast uncovered, in hot oven for about 30 minutes or until wedges are tender.
  4. Meanwhile, heat remaining oil in large frying pan; cook garlic, onion and pepper stirring until vegetables soften.
  5. Add mince; cook, stirring, until browned.
  6. Stir in mustard, vinegar and sauce. Bring to the boil then reduce heat; cook, stirring, until Sloppy Joe is cooked and slightly thickened.
  7. Serve wedges topped with Sloppy Joe mixture, sprinkle with cheese.

 

Tips –

 

Left over Sloppy Joe topping can be stored in the freezer for up to two months.

Why not try making Sloppy Joe Toasties by toasting mixture between bread with grated cheese.
